Keto Swedish Meatballs

 

Keto Swedish Meatballs are my absolute favorite! I had them for the first time at IKEA. Those are some creamy looking meatballs.

Ingredients:

  • 20 frozen meatballs
  • 6 Tbsp. butter
  • 2 cups mushrooms, sliced
  • 1 tsp xanthan gum
  • 2 cups heavy cream
  • 2 cups beef broth
  • 1 Tbsp. parsley
  • 1/4 tsp nutmeg
  • 1/2 tsp allspice
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 Tbsp. Worcestershire
  • 1 tsp Dijon mustard

Preparation:

  1. Microwave meatballs until thawed. Melt butter in a skillet over medium heat.
  2. Toast meatballs in butter until evenly browned then set aside.
  3. Add mushrooms to pan and sauté 3 minutes. Whisk in xanthan gum.
  4. Pour in heavy cream, beef broth, and seasonings. Bring to a boil then reduce heat to low. Simmer for 10 minutes or until thickened.
  5. Stir in Dijon, Worcestershire, and meatballs right before serving.
  6. Serve over low carb pasta or mashed cauliflower.

Note:

Traditional Swedish meatballs are served with lingonberry jam. I chose sugar free cranberry sauce as a low carb substitute. Scroll back a few posts on my page for the recipe.
